Bema and Pa ’s Blood Orange Wild Rice Salad

Ingredients:
| 1 cup |
wild rice, cooked |
|
| 1/2 cup | toasted pecan pieces | |
| 1/2 cup | dried cranberries | |
| 2 tsp. | dried cilantro | |
| 1/2 tsp. | ginger powder | |
| 2 cups | mixed spring greens | |
| 1/2 cup | Feta cheese crumbles | 1/4 cup | Bema and Pa's Blood Orange Extra Virgin Olive Oil |
| Directions: | |
| 1. | Toss wild rice, pecans, dried cranberries, cilantro and ginger together |
| 2. | Divide greens equally into 4 equal parts on serving plates |
| 3. | Top each plate of greens with a portion of the wild rice mixture |
| 4. | Sprinkle Feta cheese over each plate of greens |
| 5. | Drizzle Bema and Pa's Blood Orange EVOO over all the salads! Serve and enjoy! |
